On tortilla, layer horizontally across the middle:
- Blend 8 oz. tofu, 1/4 c water, 2 T lemon juice, 2 T olive oil, 1 T mustard, 1 T minced garlic.
- Slice 2 large portabello mushrooms. Saute in olive oil.
- Lightly steam 1 c spinach or bok choy.
- Slice 2 c onion. Saute 30 minutes.
- Shred 1 c carrot.
Fold in sides. Roll up.
