Creamy Salad Dressing July 23, 2007

Blend 6 ounces drained soft silken tofu, 2 T lemon juice, 1 T canola oil, 1/2 t salt, 1/4 t pepper, 1 T chopped fresh parsley, 1 chopped clove garlic, 1/2 T cider vinegar.
Competes with ranch dressing on salads, baked potatoes, or raw vegetables.

Miso Soup July 19, 2007

In large pot, heat 2 teaspoons canola oil. Add 3 slices fresh ginger root and 1 large thinly sliced onion. Saute over medium heat for 5 minutes and add 2 carrots, peeled and thinly sliced, 2 stalks thinly sliced celery, and 4 cups coarsely chopped cabbage. Stir well. Add 5 cups water, bring rapidly to a boil, then lower heat and simmer covered till carrots are tender, about 10 minutes. Remove from heat. Place 4 tablespoons miso in a bowl, add a little of the vegetable broth, and stir well into a smooth paste. Add more broth to thin the mixture, then add to the pot of soup. Let rest for a few minutes. Serve in bowls with chopped raw scallions.

Furofuki Daikon July 15, 2007

Boil 1 cm of water with a crumbled postage-stamp sized piece of kombu or 2 dried shiitake mushrooms.
Meanwhile, cut a daikon or carrot into 2 cm diagonal wedges. Cook covered 10 minutes with a pinch of salt.
Dissolve miso in a bowl of cool water; Add to pot.
Cook until water is gone (about 30 minutes), tossing the pot to coat daikon with miso.

Portabello Wrap |

On tortilla, layer horizontally across the middle:
- Blend 8 oz. tofu, 1/4 c water, 2 T lemon juice, 2 T olive oil, 1 T mustard, 1 T minced garlic.
- Slice 2 large portabello mushrooms. Saute in olive oil.
- Lightly steam 1 c spinach or bok choy.
- Slice 2 c onion. Saute 30 minutes.
- Shred 1 c carrot.
Fold in sides. Roll up.

Ginger HIjiki |

Reconstitute hijiki with a pint of water; save water.
Fry 1/2 t turmeric in 3 T olive oil.
Add 2 medium onions, chopped into 1/2" squares.
Fry a few minutes. Add 2 oz sliced garlic cloves, 4 oz minced ginger, 8g salt
When onions are translucent add
450g soaked drained hijiki
and 2 oz apple juice.
Add the water from the hijiki. Boil 10 minutes. Add soy sauce.

Wild Rice with Pecans, Shiitake, and Onion |

Rinse then drain 1 cup wild rice in a colander. Boil in a pan 3/2 c water and 1/4 t salt. Add rice. Simmer 40 minutes. Pan-roast 1/2 cup chopped pecans until browned and fragrant; add to rice. Steam covered 10 minutes.
Meanwhile, dice 1 c onion and fry in 3/2 c water until translucent. Add 1 c fresh shiitake and stir. Verify 1 c water remains. Cook 5 minutes. Add 2 t tamari and remove from heat. Mix with rice.

Mushroom rice recipe July 12, 2007

In a pot, mix 2 c water, 1 c brown rice, 2 T sake, 1 T soy sauce, and 1/2 t salt. Layer on top 200g thinly sliced mushrooms. Boil. Simmer uncovered for 40 minutes. Cook uncovered for 5 minutes. Stir and serve.
