To a hot teflon fry pan, add oil, then vegetables and stuff (mushrooms, peas, corn, carrots, little bits of chicken, etc.). Flavor with salt and pepper. In a bowl, mix 200g hot white rice with 2 beaten eggs, then stir in pan for a minute. Serves two. (Except for the oil and salt) fabulously healthful.

Grilled Tofu recipe June 24, 2007

Coat 1 large sweet red pepper with cooking spray and sprinkle 1/8 teaspoon of salt. Grill 30 minutes, turning once. Meanwhile, slice 15 oz firm tofu into 1/2-inch-thick slices. Pat dry with paper towels. In a small bowl mix 1/2 tsp cornstarch with 1 tablespoon of water. In a small saucepan combine 1/2 cup soy sauce, 2 Tbsp honey, 4 minced garlic cloves and 2 tsp ground ginger. Boil then whisk in cornstarch mixture. Simmer, stirring constantly, for 1 minute, until slightly thickened. Whisk in 1 Tbsp sesame oil. Brush tofu slices with a small amount of soy sauce mixture. In a medium bowl toss 10 oz spinach leaves with remaining soy sauce mixture until wilted. Grill tofu for 10 minutes, turning once, until slightly crispy. Meanwhile, coat with cooking spray 2 thinly sliced medium yellow summer squash and 9 medium scallions; then sprinkle with 1/4 t salt. Grill squash 5 minutes. Finely chop 1 raw scallion. Place a slice of tofu on each of 4 plates and top each with a mound of spinach. Divide pepper, squash and cooked scallions evenly among plates. Sprinkle with raw scallion and serve.

How to Fall Asleep June 23, 2007

- Read. Reading will help the mind focus on one thing, instead of racing
about the day's activities.
- Practice deep breathing: lie on your back and breath in deeply for three
counts, watching your stomach rise, and then breathe out for three counts. Do
this for about ten minutes and then switch so you're lying on your right, and
repeat the breathing process. Close your eyes, count each breath as you inhale
and then relax as you exhale. Most people will fall asleep before they reach the
count of 20.
- Pray: Talk to the deity of your choice about what is racing through your
mind, and give the situation over to that deity.
- Meditate:visualize yourself addressing your thoughts and resolving them.
Or, meditate on a calming word or phrase. This slows your heart, relaxes your
muscles, and unburdens your mind enough to fall asleep.
- Count as high as you can. This makes your mind focus on one easy thing.
- Think of something you like. This makes you calm. This also gets your mind
away from distractions of life.
- Starting from the very tips of your toes, imagine yourself sinking into the
mattress. In your mind, begin to "acknowledge" everything around you that all
your senses are experiencing. For example: Say to yourself (not out loud), "I
hear the clock ticking. I smell the lotion I just applied to my hands. I feel my
legs' weight on the bed. I hear my spouse/partner breathing. I see different
shades of black. I hear the dog barking in the distance. I hear myself in my own
mind talking.", etc. This should help to clear your mind by slowly acknowledging
everything and subsequently dismissing it. Stay on your back, sunk into the
mattress until you feel it is time to roll into your desired position.
- Exercise during the late afternoon. Go for a jog or to the gym. The
aftereffects of the chemicals in your body released during the workout will get
you through the evening and you'll fall asleep easily that night.
- If you have noisy neighbors, leave the fan on in the bathroom to drown out
the irregular beats of their music, televisions, late night arguments, etc. If that
doesn't work, don't underestimate the power of earplugs... Just make sure you
can still hear your alarm!
- Do not exercise before going to bed. This will get your adreniline going,
your heart pumping, and speed up your respiratory system. Those things will
make it very hard to fall asleep.

Tuscan Potato and Pepper Packets June 18, 2007

In a large bowl, combine 1 pound uncooked red potatoes, scrubbed and thinly sliced (about 3 cups), 1 medium yellow pepper, cut into thin strips (about 2 cups), 1 medium red onion, thinly sliced (1 cup), 1 Tbsp olive oil, 2 minced medium garlic cloves, 1 Tbsp fresh chopped rosemary, 1/2 tsp salt, and 1/2 tsp freshly ground black pepper. Mix until coated. Tear off four 12-inch long pieces of aluminum foil. Spread about 1 1/2 cups of vegetable mixture in a fairly even layer near one end of each piece of foil. Fold foil over to form packets; fold edges over to form a tight seal. Grill packets, turning a few times, 20 to 25 minutes.

Review of Safari on XP |
 |

I'm using Safari on XP (despite the security and font bugs) and find
it adequate for English, but unusably broken for Japanese.
Bugs: Fat download: at 8 meg, it's twice the size of most browsers. Messy installation adds sundry non-safari junk to windows and other folders. Builtin font anti aliasing blurs text, especially in menus. Can't resize window from sides. RSS feed reader works on engadget but not on gmail. Space and shift-space scroll
HTML pages but not RSS feeds. Can't save complete web page (with embedded media). Tab window diversion doesn't (e.g., google docs litters screen with toplevels). Can't type Japanese into gmail
(dealbreaker for me). Scrambled Japanese in a google doc (likely misinterpreted encoding; dealbreaker). No type-n-go (rodent-free surfing). No bookmarklets with
arguments (like my delicious search). Blocks pop ups but not ads. No gestures. Safari's security holes make Internet Explorer seem safe!!!
Cool: Resizable text fields. Drag n drop tabs. (This should work on OSX too.)

Eggplant Curry recipe |
 |

Peel a large eggplant and cut into 1/2" cubes. Sprinkle with salt and leave in a colander for 30 minutes. Heat oil in a frying pan; Add 1 diced onion, 1 diced green pepper, curry powder, ginger, chili, tumeric, ginger, coriander, and cumin. Saute 10 minutes. Stir in eggplant, cover the pan and cook for 15 minutes, or until the eggplant is nearly tender. Add 3 diced tomatoes, salt, and pepper. Continue to cook, covered until the eggplant is completely tender, about 20 minutes more. Stir occaisionally to make sure nothing sticks to the pan.

Eggplant curry recipe June 11, 2007

Peel, slice, and dice 1 onion and 1 tomato. Heat 3 tbsp. vegetable oil in a frying pan and saute onion until soft. Add tomato and stir fry 3 minutes. Wash, dice, and add 3/4 lb eggplant. Saute for 3 minutes. Add 1/4 tsp. turmeric powder, some salt and chili powder. Add 1/4 c. water, cover and cook about 15 minutes or until the eggplant is soft. Serve with rice.

Cover 8 eggs with cold water. Boil. Remove from heat, and wait 10 minutes. Cool, peel, and dump eggs in bowl. Smash with fork. Add 1/2 cup mayonnaise, 1 teaspoon ground black pepper, some salk, and 1 tablespoon yellow mustard. Mix until smooth. Refrigerate.

Frozen Strawberry Yogurt recipe |

Place 2 c chopped fresh strawberries in tupperware. Sprinkle 2/3 c sugar. Wait 15 minutes. Drain juice into saucepan. To pan add 1 envelope unflavored gelatin. Wait 2 minutes. Heat pan, stirring frequently, until gelatin dissolves and mixture smoothes. Pour over strawberries. Add 8 ounce strawberry yogurt, 1/2 c buttermilk, 2 T lemon juice. Mix well, then freeze 2 hours. Blend until smooth. Freeze 6 hours. Remove from freezer 15-20 minutes before serving.

Heat 2 fry pans. Spray in Pam. Add a tablespoon of olive oil. Lay sliced eggplant, mushrooms, red and green peppers, 4 onion slices, tomato slices. Sprinkle salt, pepper, garlic, basil, oregeno. Fry five minutes per side. Toast bread completely (to prevent vegetables from gooeying up bread) then add a slice of cheese and a thin spread of mayo. Build sandwhiches, place in one pan, place second pan atop (to compress) and cook two minutes.

Place three herbal tea bags in a large pyrex measuring cup, fill with boiling water, and steep for ten minutes. Dump into an empty 1500 ml PET bottle, and top off with water. Refrigerate.
If you're used to drinking coke, sweat tea, or coffee, it takes only a couple days to get used to this new taste, and you'll save hundreds of calories and several dollars each day! Plus there're no scary chemicals: no caffeine, no weird artificial sweaters.
There're so many great tastes to try! So far I prefer Strawberry Vanilla, but I'm looking forward to trying Apple Cinnamon and Orange Burst!
