Chicken OmuRice recipe May 29, 2007

Saute 200g diced chicken with garlic in oil. Add diced green pepper, mushrooms, carrots, peas, and onion. Add cooked rice, salt, pepper, and 1/4 cup ketchup.
For each omelet: In a second flat oiled pan heat two whisked eggs. Dump chicken rice in center and fold omelet. Stick a plate on top and turn the pan over to dump out the omelet. Garnish with ketchup.

How to share OSX files to XP May 25, 2007

XP users can log into a Mac as an osx user, and read and write that user's files!
OSX: System Preferences > Sharing > Services > FTP access > Note IP address at window bottom
XP: Start > My Network Places > Add > Next > Next > enter Mac's ftp://IP > Next > Uncheck anonymous > Enter Mac's username > Next > enter name > Next > Finish > Enter Mac's password
This sharing of a Mac's files to a PC is the easier direction, because OSX comes with a great easy ftp daemon (turn it on with one click in the sharing system preference panel), OSX has a clean model of user permissions (just log in as a given osx user to access all their files) and XP comes with a great easy ftp client (a one-time setup of 10 clicks and several text entries give you easy access to an Explorer-like window allowing bidirectional file copy, move, deletion, and renaming). The opposite direction is tougher, because OSX lacks a graphical ftp client, and XP lacks an ftp server, requiring you to instead use msb, with its Windows-like insecurity, clutziness, and requirement of rebooting.

Dell has great computer-fixing service! |

This last month both of our two Dell desktop computers failed to boot. One of them started beeping instead of booting when we pressed the power button. The other one displayed a "bad disc error" instead of booting. I'd heard Dell had low quality, and I was now a believer, but I'd also heard that Dell had great service. Still, I procrastinated calling Dell, fearing that I'd have to spend a day boxing up our two desktops and running them to the post office. (Dell is exclusively mail order and doesn't have stores.) On top of that, I wasn't sure our PCs were still under warranty.
Finally today I got around to calling Dell. What a pleasant surprise! Toll free number. They picked up in less than one minute. (I ignored all the incomprehensible Japanese prompts to "press 33 if you have a computer being fixed today" and whatnot.) Our desktops were indeed under warranty, so Dell would fix them for free! After I told them I could probably install a new hard disc, Dell promised to mail me a new disc, and two days after that send a guy to our house to pick up the old broken disc. No trip to the post office! On the phone the Dell guy diagnosed our beeping computer with bad memory, and walked me through pulling out the memory and then pushing it back in, which, incredibly, fixed the problem! Woo hoo!

Frozen Banana Cream recipe May 22, 2007

A healthy replacement for ice cream.
Peel 1 very ripe banana and cut it into chunks. Freeze uncovered on a plate for at least an hour(or overnight). Blend until smooth and creamy. Sprinkle chopped nuts, or place on a bed of pureed raspberries or strawberries.

Stuffed potato recipe May 21, 2007

Rub potatoes in oil, sprinkle on some salt, then bake at 350 for an hour. Slice and heap on chili and shredded cheese. Serve with mixed veggies.

Strawberry Spinach Salad |

Always a favorite at parties. Lately I've been breakfasting on it, as part of a serotonin-friendly diet.
In a saucepan over medium heat, mix ¾ cup sugar, 1 tsp salt, 1/3 cup red wine vinegar, and 1 tsp dry ground mustard. Heat long enough to dissolve sugar. Cool. Add ½ cup onion, ½ cup oil, 1 tsp poppy seeds. Chill overnight.
Toss 10 oz spinach and 1 pint strawberries with dressing. Add ½ cup toasted sliced almonds just before serving.

Fruit smoothie recipe May 18, 2007

Spread cubed fruit on wax-paper on baking sheet. Freeze 45 minutes. Blend with apple or orange juice, a little lemon juice, yogurt or ice cream, honey or sugar. Serve in chilled glasses.

Taco meat recipe |

Fry ground chicken, adding salt, chili power, cumin, paprika, garlic or garlic powder, and chopped onion and green pepper. Cover with water. Boil for an hour, breaking up lumps with potato masher.

Stuffed pasta shells May 11, 2007

Preheat oven to 350. Cook pasta shells according to package directions. Grate 1/2 lb mozzarella and 1/2 lb soft tofu in food processor. In large bowl, combine 2 beaten egg whites, tofu, Mozzarella cheese, 1/3 c grated parmesan, 1/2 c chopped parsley, 1/3 c skim milk, 1/2 tsp pepper and 1 tsp. basil. Heat 3 1/2 c spaghetti sauce. When shells cool, use tablespoon to stuff 5-6 oz (24) large pasta shells with tofu-cheese mix. Spray two 9x10 inch round baking dishes with nonstick coating. Spread a small amount of sauce on pan and arrange stuffed shells. Drizzle shells with remaining sauce so they do not dry out while baking. Lay a piece of foil over pan (do not seal edges) and bake for 15 minutes. Or microwave uncovered 5 minutes. Garnish with parsley.

Stuffed jumbo pasta shells |

Preheat oven to 350. Boil water; add pasta shells; boil 15 minutes. Beat 2 eggs; add 2 lbs cottage cheese, 8 oz grated mozzarella, and 1/2 c grated parmesan; mix in 1 tsp salt, 1/4 tsp pepper, 1 tsp parsley. Layer spaghetti sauce, meat, and stuffed pasta shells a large casserole dish. Bake 45 minutes.

Eggplant and Tofu in Spicy Meat Sauce recipe |

Cut 1 unpeeled 12 oz eggplant into 1/2-inch cubes. Toss with 1 tsp salt; let stand for 15 minutes. Cut 250 g tofu into 1/2-inch cubes; set aside. In wok, heat 2 tbsp oil; add 1/2 tsp pepper flakes, 8 oz ground beef, 3 minced garlic cloves, 1 tsp minced ginger and 1/4 tsp pepper; stir-fry for 4 minutes. Add 2 tbsp sherry; cook for 1 minute. Add 2 tbsp soy sauce and 1/2 tsp sugar; cook for 1 minute. Rinse eggplant thoroughly under cold running water; drain in colander, pressing lightly. Add eggplant to wok; stir-fry for 2 minutes. Add tofu and 1 cup chicken stock; cook, stirring gently to keep tofu in cubes, for about 3 minutes. Mix 2 tsp cornstarch with 1 tbsp (15 mL) water; stir into sauce. Add 2 chopped green onions; cook for 1 minute.
