Preheat oven to 450 F. Wash zucchini or squash, dry, and cut into 3/4 inch slices. Chop 10 large garlic cloves. Toss all in plastic bowl with 2 T olive oil and 1 t chopped thyme, rosemary, or sage. Spread in baking dish. Roast 20 minutes, until squash softens and garlic browns. Sprinkle pepper.
